Pesto Pizza with Homemade Pesto

Because who doesn’t love pizza and pesto? My friend Hannah and I are actually obsessed with both so decided to make it ourselves. This was our first time making pesto from scratch and not only was it simple and fun but also made my apartment smell delicious. The main ingredient in pesto is pine nut, albeit shockingly expensive for nuts, everyone who loves pesto should try making their own at least once. The prep is incredibly simple(unless you plan on instagramming some of the prep like I did) and for the sake of time/your insanity, I would suggest just purchasing the pizza dough from your local pizzeria, or, if you want to get fancy with it(as I did), find your nearest California Pizza Kitchen, and ask to purchase their dough(I paid close to nothing for two 8-inch rolls of dough from them, it was awesome). So find a friend, get some wine, and make this recipe-it’s a lot of fun.

Prep Time: 15 mins

Prep Time with Instagram: 2 hours………

Cook Time: 10 mins

What You’ll Need:

2 tablespoons pine nuts
1 large garlic clove, finely chopped
1 pinch of salt
1/4 cup chopped fresh basil leaves
2 tablespoons grated Parmesan cheese
2 tablespoons extra-virgin olive oil
Freshly ground black pepper
7 ounces(or 8 if it’s from CPK) prepared pizza dough
All-purpose flour, for rolling
1/4 small red onion, thinly sliced
1 red ripe tomato, thinly sliced
4 slices fresh mozzarella

If there’s anything else you want on your pizza like olives, prosciutto, etc. feel free to add it to the recipe when you’re topping your pizza!

Directions:

1.) Make the pesto: place pine nuts in a bowl and crush with a wooden spoon (or pestle) to make a chunky paste. Add in the garlic and a pinch of salt and combine. Mix in the basil and Parmesan. Stir in the olive oil and season with pepper.

2.) Preheat the oven to 425 degrees F.

3.) Put the dough onto a floured surface and knead and stretch the dough to about an 8-inch diameter. Dust a wooden pizza paddle with flour and carefully transfer the dough(or use you and your friends hands…). Spread the pesto over the dough, leaving 1-inch around the edge to form a crust. Top with the onion and tomato slices and season with salt and pepper. Scatter any additional toppings all over the pizza and top with the fresh mozzarella. Slide the pizza into the oven and bake until the cheese is melted and the crust is golden, about 10-12 minutes.
